Replace blank sub-arrow indicator for expanded menu on small screen:

When viewing the menu on a small screen, the sub-arrow indicator appears as a plus sign. When expanding the menu item it disappears. How can I show another sub-arrow indicator, such as a minus sign, instead of nothing at all when the menu is expanded?
